Vetri Discusses ‘Simplicity, Authenticity’ with

In a recent interview with, Marc Vetri discusses his writing process, the authenticity of his cooking, and the simplicity of Italian food. Says Vetri, "My food is definitely grounded in Italy. If you take Michael White, Mario Batali, me, we all have a similar vision about food. It's about highlighting the ingredient — letting one or two flavors sing. We're not inventing or reinventing anything, since pretty much everything we do has already been done. We're just basically doing our version of the perfect combination of ingredients that Italy has already thought of."
